420JS martensitic stainless steel rich in 0.15% carbon, containing min. 12% chromium, which offers high hardenability in the range of 54-56 HRC and strength, toughness, machinability and excellent corrosion resistance. The high carbon content produces chromium carbide compounds for wear resistance and edge retention after hardening. Due to its high hardness, the steel is suitable for manufacturing cutting tools, knife blades and medical instruments.

Blade - extremely sharp with a Sashimi (Yanagiba) shape, ideal for preparing traditional sushi and sashimi, portioning, filleting, skinning. The single-sided grind allows you to cut food into thin slices and the extremely long blade gives you the ability to do it in one cut. The blade is brought out with a single-sided grind (Single Beveled) which guarantees great cutting properties. Finished with an elegant satin finish, which, in addition to aesthetic qualities, prevents the sliced vegetables or meat from sticking to the blade.

Handle - made of natural maple. The ring fixed on the handle prevents the blade from slipping out. The traditional round shape allows the knife to easily fit into any hand and work for a long time without hand fatigue.

NOTE!
The knife is not dishwasher safe!!! Hand washing in mild detergent is recommended.
