H-2 - an improved austenitic stainless knife steel that is the successor to H-1, produced by Japanese steel foundry Myodo Foundry. The high-chromium, low-carbon (rolled without heat treatment) stainless steel contains 13.73% chromium, 0.09% carbon, 0.17% copper and 0.06% nitrogen. The knife can stay in fresh water as well as sea water, and will not rust even when left wet after use. The result was achieved by adding chromium and nickel to the steel, and replacing some of the carbon with nitrogen.
